2008 Class Description
We are pleased to offer this exciting new addition in celebration of our partnership with Cook’s Pots and Tabletops, the Willamette Valley’s premiere cooking school. An IACP finalist for Cooking School of the Year in 2007, Cook’s Pots and Tabletops will be hosting this event for up to 20 guests. James Beard Award winning chef Cory Schreiber, founder of Wildwood restaurant in Portland, has assembled a truffle-inspired gourmet menu especially for this class.

- Black Truffle Marinated Beets with fennel
- Baked stuffed Autumn Squash with white truffle polenta and green olive tapenade
- Roasted Leg of Lamb with red wine braised lentils, black trumpet mushrooms and black truffles
- Caramelized Anjou Pear with apple cider truffle ice cream and hazelnut cookies

Cory Schreiber opened Wildwood in Portland twelve years ago and rapidly became a leader in the region’s bustling culinary scene.
Cory won the James Beard Award in 1998 for Best Chef Pacific Northwest – a fitting tribute to a man who cherishes the land, its people, and produce much in the same way Beard, a native Oregonian himself, did. [top]
