Small plate recipes based on fresh Oregon truffles, either winter white or winter black; can include salads, soups, light entrees, no amuse or dessert.
No truffle oil, except as garnish and only if using oil made from fresh Oregon truffles.
Recipe based on serving 4-8 people, with understanding that it will be translated by presenting chef for up to 175.
Focus on fresh, seasonal, locally sourced ingredients.
Judges have the right to choose to review a maximum of three submissions from a single entrant.
Submissions must be received NO LATER THAN November 30; three finalists will be notified by December 30, 2011.
