One Big Truffle Recipe Contest

    to purchase Oregon Truffles!

    Small plate recipes based on fresh Oregon truffles, either winter white or winter black; can include salads, soups, light entrees, no amuse or dessert.
  2. No truffle oil, except as garnish and only if using oil made from fresh Oregon truffles.
  3. Recipe based on serving 4-8 people, with understanding that it will be translated by presenting chef for up to 175.
  4. Focus on fresh, seasonal, locally sourced ingredients.
  5. Judges have the right to choose to review a maximum of three submissions from a single entrant.
  6. Submissions must be received NO LATER THAN November 30; three finalists will be notified by December 30, 2011.

  8. Audience at the Friday One Big Table evening decides on which of three dishes best represents the Oregon truffles.
