The Truffle Cultivation Seminar is an introductory course based on a university program on truffle cultivation taught in Spain and elsewhere in Europe. This course condenses material offered over three weeks into an intensive day, followed by a truffiere tour and truffle hunt on a second day. The instructors, both from Spain, are Dr. Carlos Colinas, faculty member at the University of Llieda in Catalonia, and Christine Fischer, researcher at the Forest Technology Center of Catalonia. Both work with many highly successful truffle farmers throughout their region and have made major contributions to the remarkable success of the Spanish truffle cultivation industry.

The Truffle Cultivation Seminar will be held Friday, January 29th, and Saturday, January 30th, 2010 at the Valley River Inn, Headquarters hotel for the Oregon Truffle Festival. Friday consists of classroom sessions with the instructors in the morning and early afternoon, followed by the Festival keynote address by Dr. Pierre Sourzat, a fifth generation truffle farmer and renowned researcher in France’s truffle cultivation industry. Breakfast and the Perigord truffle lunch are included on Friday. Saturday’s classroom is in the field, consisting of a Truffiere tour with both instructors, a Winery Lunch with a guest chef, and a truffle hunt with truffle dogs for the native Oregon white truffles near the winery grounds.

The Truffle Cultivation Seminar is available as a stand-alone offering, or as part of Festival Experience Five, The Epicurious Cultivator, which includes Friday evening’s La Recreation dinner with Chefs Jaques Ratier and Rocky Masselli, Saturday evening’s Grand Truffle Dinner, and a breakfast buffet and the Oregon Truffle Marketplace on Sunday.
